If you asked my husband what his top 3 meals were, I honestly think #3 (behind bacon cheese burger and chicken alfredo), would be this Simple Farro Salad with Sausage and Apples. You don’t believe me? Just ask him 😉
Farro may not sound familiar to you, but it is just an ancient grain like barley or wheat berries that can be used instead of pasta, served in soups, in salads, and everything else in between. Trader Joe’s carries a 10 Minute Farro (pearled – with bran removed) that’s an extremely versatile product and it couldn’t be easier to make – cook for 10 minutes and it’s perfect, every time! If you can’t find farro near you, or would prefer to use something else instead – I have made this recipe using a whole grain wild rice blend and it is also delicious.
This recipe starts off by cooking the farro, to which you add turkey or pork breakfast sausage browned with some red onions. You wouldn’t want to use Italian sausage here. While it would still probably be delicious, the spices added to the breakfast sausage (lots of sage!) are the best compliment to the crisp apples and the nutty farro. Adding chopped fresh parsley and some apple cider vinegar is the finishing touch – don’t skip these ingredients! And the best thing about this dish? It comes together in 20 minutes or less:)

To make this Farro with Sausage & Apples you will need:
1 8.8 oz bag of Trader Joe’s quick-cooking farro
1 lb pork or turkey breakfast sausage
1 small red onion, minced
2 Apples, chopped (I prefer Granny Smith or Fuji)
1/4 cup parsley, chopped
3 tablespoons apple cider vinegar
3 tablespoons olive oil (note – this is only necessary for turkey sausage, pork should have plenty of pan drippings on its own!)
1 teaspoon Salt (for cooking water)
Salt & Pepper to taste
Here is what you do:
Bring a small saucepan of water to boil. Cook the farro in salted boiling water for 10 minutes or until done. Drain and set aside. Heat a skillet over medium heat. Add the sausage and red onion and cook until the sausage begins to brown and is crumbly.
In a large bowl, combine the pan drippings, apple cider vinegar, parsley, salt & pepper. Add the farro, sausage, apples, and toss together until the salad is well combined. I like to serve this Farro with Sausage & Apples warm, over fresh baby spinach leaves.
My family and I typically devour this dish right away, but it is also amazing reheated the next day. Hope you enjoy!
