While it may be cooling off in some parts of the country, we are still experiencing a lot of 90+ degree days. We are enjoying plenty of meals that we can either grill or eat chilled. One of my favorite ways to utilize the grill for my family’s dinner is with meat and vegetable skewers. In the early days of summer, I love BBQ Chicken Skewers with Pineapple and Bacon. They are so delicious! But now that we are entering September, I love incorporating some flavors of fall and my favorite pair is pork and apple.
These Grilled Pork Skewers with Apples, Sweet Potatoes, and Red Onions are lightly coated with a maple-apple cider vinegar and oil marinade that is subtle, but so flavorful!
They are so quick to throw together (can be made several hours in advance) and are gluten-free, dairy-free and Paleo. I mean – that’s pretty great, right? But wait until you taste them – they are so simple – but so unbelievably good!
To make these Grilled Pork Skewers with Apples & Sweet Potatoes you will need:
3 thick cut boneless pork chops or 1 1lb pork tenderloin
1 large sweet potato
1 large russet potato
1 red onion
1 Granny Smith apple
2 tablespoons olive oil
1 tablespoon maple syrup
2 tablespoons apple cider vinegar
2 teaspoons salt
Here’s what you do:
Soak wooden skewers in water for about 30 minutes or use metal skewers. Wash and peel the potatoes. On a large cutting board, chop the potatoes, onion, apple, and pork chops into pieces roughly the same size and shape ( I did 1-2 inch chunks.
In a large bowl, combine the olive oil, syrup, apple cider vinegar and salt. Add the onions, pork, and apples to the bowl and stir well to coat everything in the vinegar mixture.
Place all of the russet and sweet potato chunks in a separate microwave safe bowl. Cover with a plate or plastic wrap and microwave for three minutes. You are not looking for them to be cooked – just softening them up a bit, so they will cook in the same amount of time as the pork, onions, and apples on the grill. When the potatoes are cool, toss them together with the pork, apples, and other ingredients.
Using wooden or metal skewers, thread alternating pieces of pork, onion, apple, and potato. I like to start and end with onions because they always seem to hold everything in place.
You can chill the skewers just like this for several hours or overnight, until you are ready to grill. Cook over medium-high heat for about 2-3 minutes a side, turning 4-5 times. It usually takes about 12-15 minutes total.
We served ours just like this – and it was meat, potatoes, and vegetables all rolled into one delicious skewer But it would also be delicious served over rice or with a spinach salad.
