Creme Brûlée. Tiramisu. Dark Chocolate Truffles. Mmm… dessert! I love it all. I would never turn it down. But you know what I love even more than fancy or gourmet treats – kid desserts!
You know what I mean… No Bakes. S’mores. Rice Krispy Treats. But oh man, I don’t know what it is about Rice Krispy Treats… I LOVE them. I can’t be within 2 feet of a pan without sneaking a bite (or half a pan!) But this Cookies & Cream version of Rice Krispy Treats are showing up all over the place – and for good reason! They are better than Oreos. And better than Rice Krispy Treats. They are AWESOME~! (And if you use vegan butter – they are also nut, dairy and egg free.)
To make these Cookies & Cream Rice Krispy Treats you will need:
1/4 cup butter (Earth Balance Spread for vegan)
10.5 oz bag of marshmallows
6 cups Rice Krispies cereal
Here’s what you do:
Grab a ziplock bag and fill it with your Oreo cookies. Seal tightly and place in another bag if you are paranoid like me:). With a rolling pin, your hand, or even a soup can, crush up the Oreos into crumbs and small pieces.
Melt the butter in a large pot over medium heat. Add your marshmallows to the melted butter and stir to coat. Let the mixture melt for about 4-5 minutes and then start the marshmallows until creamy.
Add the Rice Krispies cereal and the crushed Oreo cookies to the marshmallows and stir until everything is covered in gooey marshmallow.
When your cereal and cookie mixture looks like this, dump it out onto a greased pan – whatever size you prefer. 9inch square for super thick treats or a 9×13 pan for thinner ones. Wet your hands with a little water and push the mixture down into your chosen pan. If your hands start sticking, run them under water again and keep pushing down. You want to make sure all the ingredients are as tightly pressed as possible – it makes for the best treats 🙂
