Crockpot Beef Tacos

Wanna know what’s cooking this week?

It was a busy and productive weekend in our house – thanks to a toilet leak that lead to the discovery of a mold problem, now a complete half bathroom remodel is underway! I am definitely ready for the new week though, and I have some tasty things on the menu!

I know sometimes it can be overwhelming and hard to figure out exactly know how to start! Well, here’s one way I plan my menu for the week… you could call it the “work thru the inventory” method

First, I take about 10 minutes and do a quick inventory of my pantry and freezer. I survey what meat I have on hand – plenty of chicken breast, various cuts of beef from my last 1/8 of a cow share, pack of Trader Joe’s chicken sausage, and lots of bacon. I scan my pantry for starches and grains – I find lots of brown and jasmine rice, plus half a dozen sweet potatoes. Then, I quickly checke the fridge for produce and dairy  andfound several limes, a few handfuls of kale, a head of broccoli, some bell peppers, and lots of mozzarella cheese. Plus, I know have basil and cilantro plants that I need to put to good use! So then the fun begins, time to start brainstorming

I search on google, look up on Pinterest, and browse my own recipe ideas files for what I could make using the ingredients I already have. Once I come up a 7-10 good ideas, I make a list of all the extra ingredients I need from the store. After a quick grocery shopping trip to Trader Joe’s, I am all set with all the ingredients I need to create 7 delicious, healthy and east meals for the week. So that’s all there is to it – and now it’s time for Monday Menu!

Monday: Sweet and Sour Chicken Freezer Meal, Brown Rice and Steamed Broccoli

Tuesday: Crockpot Beef Tacos, Refried Beans and Pico de Gallo

Wednesday: Roasted Chicken Sausage with Bell Peppers and Sweet Potatoes

Thursday: Caprese Burger Stacks, Oven-Roasted French Fries and Spinach Salad

Friday: Grilled Fajita Chicken, Cilantro Lime Rice, and Guacamole

Saturday: Cookout by the pool: Hot Dogs, Potato Chips, and Fruit Salad

Sunday: Pancakes, Bacon and Mango Kale Smoothies
